V. & S. Perraud - Autrefois 2016 (vitt/white) : The lively charm of past days
This white vintage, not produced every year and always in very small quantities with Melon de Bourgogne grape, is called « In the Old Days », a name that refers to its method of production : no additives whatsoever (including zero sulfite), fermentation and maturation in wooden barrels, no intervention nor filtering before the bottling, just like things were done...in the old days. The idea of producing this very rare vintage, came to the Perraud brothers in 2007, out of the curiosity to know what Muscadet wine might have tasted a century or more ago. Well, this wine is full of life and suprises and I don't want to spoil them by telling too much about it, so I will just say this : Blessed were those living in a time when this kind of wine was all there was. Truely, a unique and so enjoyable experience, be it alone before of after a meal, together with poultry, creamy desserts or a light meal of some nuts, white grapes and warm goat cheese.

Harvest : Selective, by hand, with an average yield of 30hl/ha.
Natural winemaking process :
Selection among the different wine press juices,
fermentation through natural indigenous yeasts only,
no intervention during the fermenation and the maturation (including no filtering nor added sulfite)
malolactic fermentation completed
maturation in used (6 times) wooden barrels for 11 to 12 months
