Domaine de Villeneuve - Fol’Envie Blanc Chardonnay 2024 (vitt/white)

Located in the village of Claret in Hérault (Languedoc), Villeneuve's estate covers 50 ha of vines, most of which are classified as AOC Pic St-Loup.
Anne-Lise Fraisse, together with her beekeeper husband and children, today offers a wide range of wines that combine tradition and modernity, made from grapes grown with respect for the environment and in symbiosis with the scrublands and forests that characterize the region.

Fol’envie Blanc is the culmination of a dream to vinify a white wine like a red wine.

Fol’Envie Blanc is made using Chardonnay grapes from old vines producing lower yields but more concentrated grapes. After being harvested, the whole clusters are put and vinified in new French oak barrels.

Once the fermentation is done and the wine made, it is matured for 10 months in French oak barrels from the Vosges region before being bottled, resulting in an exceptional white wine with ageing potential of at least 10 years.

Besides the usual fish-dishes, you might want to pair this wine with veal and chicken in cream sauce, or with strong, aged cheeses such as Pélardon, Roquefort, and Époisses.
