Eolithe is the main cuvée of Château de Fosse-Sèche and a great introduction to the distinctive features of its wines: elegance and precision, minerality, spicy/peppery and tense fruity aromas. Made exclusively of Cabernet Franc, produced with a short maceration but a long maturation on lees, this red wine is fit as an athlete and as such manages to combine freshness and power. A perfect match for a rack of lamb, duck breast or fried mushrooms. Best served between 12 and 14°.
This 2017 vintage benefited from sunnier conditions than the year before to offer a more open body and a wine that can be drunk now as well as in the coming 20 years.

Vines: Between 10 and over 60 years old
Soil: Jurassic plateau with stony structure (flint) with gravels bound together with slightly clayey earth. Free of any gross limestone, this soil allows a very deep rooting.
Climate: Temperate zone with oceanic influence, fostering a slow and progressive maturation.
Cultural method: Organic (certified by Ecocert) and biodynamic (certified by Biodyvin)
Yield: Less than 20hl/ha
Vinification: Maceration 3 to 15 days, maturation 14 months on lees.
